Stuffed Smothered and Smoked Shrooms

I have to preface this recipe by stating that it really belongs to my Mr.

I did not create it, but I sure enjoyed photographing and ingesting it.

These are so simple, I’m not even sure they need a full blog post, but since I haven’t written one this week, I suppose it is in order this chilly morning.

We had a pretty big smoke fest this past Sunday. We threw down a Bacon Fatty, ribs, tenderloin, smoked the roasted peppers for my Bloody Mary mix, made homemade shells and cheese (because I can never find the wheel kind) and then there were these here!!

They are great out of the smoker or the oven. I’m just one of the lucky gals who has a smoked food enthusiast in the house. Lucky me!!

I’m going to keep this short and sweet so I can get back to writing my PD book and doing some volunteer work. Also more holiday decorating needs done. So there is that.

Have you ever had anyone ask what you do, and you find it would be easier to list what you don’t do?

That’s my life right now. I love it.

Let’s get to the recipe so I can get this house ridiculously decorated for the Christmas holiday.

There are tons of recipes out there for things to put in a mushroom cap. Most involve cheese and seafood, and this is no exception to that trend. This serves as a great dip and also can be used to fill anything. We put it in our Big Fatty too.

What You Need:

2-3 packages of Baby Bella mushrooms with stems removed

8 oz cream cheese softened

.25 c sour cream

.25 c mayonnaise

2 c Italian cheese blend divided

1 tsp garlic powder

Dash of chili powder

Juice from 1/3 lemon

.25 tsp salt

.25 tsp pepper

1 lb crab meat (fresh or canned) NO KRAB

.5 c bread crumbs

2 Tbsp butter

What You Do:

If your man is smoking these you’ll have to get with him on time and temp.

Otherwise heat oven to 350

In a large bowl blend all ingredients except the mushrooms, half of the cheese and don’t add breadcrumbs or butter to this.

Cut butter into small bits and lay in cast iron skillet.

I used a piping bag and piped the cheese blend into the mushroom cavity.

Place filled shrooms in prepared skillet.

Top this with the breadcrumbs

Cover all in the remaining cup of cheese.

Bake for 20 minutes or until it looks like the pic above.

Serve hot and listen for the sounds of heavenly bites.
