I knew I had to compose a blog post about these as soon as I got up and my hand went for one before I even fed the dogs!!
I’m a faster, meaning I generally don’t eat food until 2PM. But to hell with that. It’s cookie month. Cookies and coffee erry morning. Don’t care. Sweat harder. It’ll be alright.
Do you guys ever wish there was a blog writer who just went straight to the recipe and you didn’t have to endure their boring life stories?
You’re wish is my command. Let’s bake something.
These are so gooey and moist with just enough pumpkin flavor, and the white chocolate chips in there just make it more interesting. They are not necessary and I’ll be making a second batch today that does not include them or the cute candy stars. Simplicity rocks sometimes, even for an extra extra chick like myself.
What You Need:
1 cup melted butter
2 eggs
1.5 c pumpkin purée (not pie filling)
2 c packed brown sugar
2 Tbsp vanilla extract
4 tsp pumpkin pie spice
2 tsp cinnamon
2.5 c flour
2 c white chocolate chips
Candy Snow Flakes If you’re fancy like that.
What You Do:
Are you ready for how easy these are??
Line a 9×13 brownie or cake pan with foil and coat with baking spray.
Preheat oven to 375
Blend butter, eggs, sugar, vanilla.
Sift dry ingredients together in a separate bowl.
After egg and butter mix is creamy, gradually add in flour mix while still mixing on low speed.
Blend until well incorporated.
Turn into your prepared pan and bake 28 – 35 minutes or until a toothpick comes out clean.
Press cute candy stars into your melty chips if you so choose.
Cool an hour at least!! It’s hard to do, I know.
Cut into small, rich, fudge, delicious bars and hide about 6 for your craving in a couple days!!
