Spicy Twisted Thai Torta

This is one of those wild ass recipes that happen from a refrigerator clean out. That being said, it was perfect because I was having trouble deciding if I wanted Asian, Mexican or BBQ. A quick scan of the fridge and the food became my muse.

We had 2 of those chopped salads down in the crisper drawer. 1 was an Asian Sesame, the other was Sweet Thai.

I had a roasted chicken, peanut butter, sweet chili sauce, soy sauce, garlic and these crazy cool wraps from Flat Out™️, along with crunchy taco shells in the pantry.

I buy lots of Flat Out™️ goods as they are low calorie and low carb alternatives to bread, and I won’t lie. I love a sandwich.

This Spicy Twisted Thai “Torta” (that’s a Mexican sandwich BTW) is an actual cross between a BBQ and slaw sandwich, a Thai peanut satay and a Mexican torta or a taco like sandwich. The torta is generally served on a crusty bread, but these are still close.

It was an easy, delicious and healthy alternative to all of the above.

I’m into those things as it is the busy season at my job and I’m engrossed in finishing the edits on my book. I don’t like gross food, and I’m watching my figure as usual. Trying my best to age slowly as possible because I have shit to do before I take leave of this lifetime.

Let me throw down the recipe so I can head off to the steakhouse for my shift.

What You Need:

1 rotisserie chicken, meat pulled and chopped

1 Dole™️ Spicy Thai salad

1 Dole™️ Sesame Asian salad

6 pack of Flat Out™️ Sweet Hawaiian foldable flat breads

Peanut Sauce:

1/4 c smooth peanut butter

1/4 c sweet chili sauce

1 Tbsp minced garlic

2 Tbsp soy sauce

1 tsp sriracha sauce

What You Do:

In a large bowl, mix the 2 salads with the entire pack of Thai dressing and 1/2 of the Sesame dressing from salad kits.

I tossed out the edamame, rice and beans from the Thai salad. It looked nasty. I saved the almonds and wonton crisps from the Sesame salad. I can use it another day.

What You Do:

The first thing to do is get your sauce mixed up. Simply throw all the sauce ingredients into a good sized sauté pan and whisk until well blended. It will be thick.

Now, heat it on medium and when it gets hot, add the chicken.

Keep an eye on the chicken and sauce while heating.

Soon as it is to a desirable temperature, pile it up on one of those foldable flat breads.

Top with your Thai Sesame slaw and eat.

I know this seems like a strange combo. I was not planning to publish a recipe for it, but this is a busy season for everyone, so if I come up with something this simple and fantastic, it is my duty to make life easier for you.

Who doesn’t want to dazzle the ones they love with food that requires no grunt work? You don’t have to tell anyone.
