Cheesy Bacon Ranch Ball

Any time this easy cheesy snacketizer comes to a gathering with me, I spend the entire event reciting the damn recipe.

I’m done with that, and while I despise the pretentious sound of, “you can find the recipe on my blog,” I will have to step out of my comfort zone and put myself and the fact that I write a blog out there for folks to read. But the truth is; it makes my stomach hurt every time I say the words.

See, I like that my blog isn’t “popular.” I’ve experienced a few phases in my life where I fit that bill and it was fun for a second, but popular is for high school students and performers. Popular is too much work. At any rate, the next time someone asks, I will have to bite the bullet and let the word be spread. Maybe I’ll even answer in a bitchy tone so the first person who asks for the recipe will spread the word.

“She writes a food blog and she doesn’t want to talk to people. The recipe is at blah blah blah dot com.”

So, this recipe is all about texture and taste. Cream cheese, shredded cheese, bacon, onion and pecans give it all that, and it gets scooped up one Triscuit at a time until the plate is clean.

The ranch seasoning powder is an add in, but totally unnecessary if ranch isn’t your thing. Believe it or not, all of us don’t love the flavor overpowering everything we eat. I’m one of those folks, but this is a treat for others, so I amp it up with the seasoning.

This is great for sports parties, picnics and holiday festivities so save it because you will want and need it again. It can also be a dip if you want to avoid all the chilling and molding and pressing stuff to the outside, but I’d add some sour cream or something to soften it a bit if that’s the route you take.

It’s just a few ingredients and a bit of time, so let’s rock it out.

What You Need:

2 pkg cream cheese

1 bag shredded cheddar

3/4 c bacon cooked and crumbled

1/2 c chopped scallions

1 pkg ranch seasoning

1/2 c chopped pecans

What You Do:

This recipe is super simple if ya think about it. You pretty much mix everything in a bowl, roll it into a ball, chill it. But there are a few extra steps.

With gloved hands, in a large bowl press and soften the cream cheese.

Add 1 1/2 c of the shredded cheese to the bowl.

Toss in 1/2 c bacon

Now 1/4 c of the scallions

Add the ranch packet.

Or maybe you don’t add them in that order. Whatever works for you.

Using your hands, get all this mixed up together.

It will be easy to manipulate with a spoon now.

Line a bowl with plastic wrap.

Yes. Some folks need the pic. It is what it is.

Now spoon or scoop dip into the bowl with your hands, and form it into a ball as much as possible before wrapping.

Wrap in plastic and refrigerate at least one hour.

Remove from bowl and press into a tighter ball in the plastic wrap if needed.

Remove plastic and smooth it out a little. The plastic wrap will leave little wrinkles all over it.

Place all the remaining ingredients plus the chopped pecans in a pie plate and roll your cheese ball in this until coated.

Press all of the crumbles and shreds and chopped nuts onto the surface, and it’s ready to go!!

Serve with a good dense cracker like a woven wheat, rye crisp or bagel chip. Pretzels work well here too.
